This blend is named for Aldo Leopold, a revered ecologist and author. It is a coffee we roast a bit longer than our other offerings, with the goal of muting acidity, accentuating mouthfeel, and caramelizing sugars. Aldo's is roasted for our loyal supporters who are nostalgic for flavors reminiscent of the classic diner coffee - strong, rich, bold. It’s currently comprised of the following: 50% Gold Mountain - a washed process compilation of coffees from Jinotega and Matagalpa, Nicaragua. This regional blend is comprised of multiple lots from all of the growers working with the export/import company from whom we source this offering, Gold Mountain Coffee. 50% Celso and Gertrudes - this is a smaller (14 /15) screen size blend from Celso and Gertrudes, who we’ve been consistently purchasing from for the past few years. Sourced through our partners at Fazenda Ambiental Fortaleza (FAF), this smaller screen size blend (aka Mirim) has been a staple component of Aldo’s for 3 consecutive seasons.
A really good taste to this one. I used a blind subscription service with 4 beans every two weeks (12 months of the service) and this bean was my favorite. I’ve been ordering it since. For comparison my tastes are a bit bitter (unsweetened iced tea / bold red wines / whiskeys). Macchiato is best for this bean. IMHO.
